CRUMPETS!
Seth and I just got back from a week long camping trip through Idaho, Nevada, and Eastern Oregon. As opposed to the normal eggs and bacon camping breakfast, we opted instead for crumpets (trader joes). Slow cooked in a cast iron pan over the fire or campstove, these babies make a great alternative to pancakes or toast. They keep well in a cooler, are super easy to cook, no messy dishes, smear with butter and locally made rhubarb jam from and you're in business. Cheers, Alicia
